Would you go court one of your friend's Ex? ,when you know your that friend is comfortably dating someone else.

yes - why not? If you know for a fact that your friend has happily moved on with life and the ex has also happily moved on with life - why not?
Unless, your friend and the ex doesn't see eye to eye and therefore if you started going out with the ex, you can't lepak with your friend anymore ... then maybe need to think abt it =D
